- Use 500 g of chicken breast, cubed.
- Prepare 60 ml of Vickys Tandoori Curry Paste - see my previous recipe.
- Get 60 ml of plain yogurt - I use free-from 'Koko' Coconut yogurt.
- You need 1 of onion, chopped.
- Prepare 3 cloves of garlic, finely chopped.
- Take 240 ml of passata.
- Prepare 4 tbsp of Stork block margarine / butter, divided.
- Get 2 tbsp of full fat coconut milk.
Instructions to make Vickys Easy Butter Chicken, GF DF EF SF NF:
- Mix the tandoori paste and yogurt together in a bowl or dish.
- Toss the chicken pieces in the mixture, cover and set aside in the fridge overnight to marinate.
- Heat 2 tbsp of the butter / margarine in a frying pan over a medium heat and brown the chicken.
- Remove the chicken from the pan, add the remaining Stork margarine and onions. Fry until softened.
- Add the garlic and fry a further minute.
- Add the chicken back to the pan with the passata and bring to a low simmer.
